cream cheese muffins







3 cups flour

1 cup sugar

4 tsp baking powder

1 tsp salt

2/3 c milk

½ c vegetable oil

2 eggs

8 oz cream cheese softened

I c sugar

Preheat oven to 375. Grease muffin pan. Combine flour, 1 c sugar, baking powder, and salt in a large bowl. Make a well in the center. Stir together milk, oil, and eggs. Pour into well in dry ingredients. Stir until dry ingredients are moistened.

Combine cream cheese and 1 c sugar. Fold about half of the mixture into the muffin batter.

Spoon batter into greased muffin pans, about ½ to 2/3 full. Spoon the remaining cream cheese mixture onto the muffins, pressing the mix into each muffin with a spoon handle.

Topping:

½ c flour

1 c sugar

¼ c butter, softened

combine ingredients, sprinkle generously over muffins. Bake 24 to 30 min until golden brown.
